Food and drink from The hEdge


A fantastic sunny day in Hilperton, Trowbridge led by Matthew Pennington of Somerset’s award winning restaurant ‘The Ethicurean’ to explore, forage and cook with ingredients from Hilperton’s historic hedges.  Food and cocktail making in the community hall followed using the haul of vetch, hawthorn, elderflower, Jack in the woods, plantain and many others set amidst Alex’s immersive installation.

The day formed part of a programme of projects exploring historical links to field patterns and boundaries within new housing areas in Trowbridge.
